Secrets of an Island
All places we visit have their secrets. We would like to discover them and see what is beneath the surface of visible. There are people and places that generously reveal its secrets, as well as those who jealously conceal them. For the greatest part of the people who visit our island the secret is everything that happens during the time when the island belongs only to the people who inhabit it.
It happens during autumn, like a great Croatian writer Miroslav Krleža said in one of his poem, in which he speaks about an autumn longing to have someone to write a letter. And it is one secret of an island. It is known only to those who walk the hidden roads and drive various vehicles when in September begin the first vintages of the most sensitive types of grapes such as pošip. The last secret can be revealed only by tasting it...
During autumn evenings, squids are being hunted. They are rich in their black “ink” which is full of odours of seaweed, and while they slowly turn on the grill, their “ink” creates the most intense scent of sea that you could possible imagine. And the symbiosis that is created when you add wild mushrooms (which can be found only by a connaisseur) and various types of wild vegetables is indeed a delicacy which will satisfy any gourmand. These wild vegetables, mixed together, are what the locals call “gruda”. It needs to be cooked in a big pot and it must keep its fresh green colour. Its odour is another secret for you to find out because it is incomparable to anything you tasted during summer.
With that dish, try the first wine in the early autumn, and don’t hesitate to drink some of the old wine as well! If you still think there aren’t any of that gourmand secrets left, the island will surprise you once again - try grilling fresh fish called “gera” and make some foccacias, and you will reveal one of the islands extraordinary secrets!
